This term a bit daunting for "transformation laboratory" is simply the kitchen dedicated to preparing terrines and other preserved in a jar containing chicken.

cuisine meets stringent hygiene standards and a check is conducted annually by the DFS to ensure that standards are met. If this is not the case, DFS is a warning and give a deadline for complete compliance, if the producer does not, his lab is closed and can no longer cook their products.

At the farm, the lab meets all standards and we process about 250 chickens per week to terrine, chicken in the pot, chicken supreme sauce, etc. ... The jars will keep for 3 years and it is without dyes or preservatives! :-)

This month will be dedicated to processing chicken.
In anticipation of the crawl space in the barn, you have to sell all the hens. Some are sold to individuals who raise them as laying hens, and others go to slaughter.

1000 of these chickens are cooked on the farm. There is a processing laboratory housed in hygiene and to cook the chickens for making preserves: boiled chicken, bowls, etc. ...

To catch the chickens before taking them to the slaughterhouse, they must be put in boxes specially designed for this. They were caught after dark, because the chickens are sleeping and they do not move. It takes them by one leg and once upside down, they do not move and they are no more than put them in the box. Some squeal a little, but calmed down quickly and it does not disturb others sleeping. Everything was done quietly and quickly.

So we will transform (or cook) 250 chickens a week for the next 4 weeks. it changes from egg collecting and lambing!
